Best Gluten Free Chocolate Chip Cookies for Valentine’s Day

The best gluten free chocolate chip cookie recipe that tastes and even more importantly LOOKS like the real thing.Finally!

Transform this gluten free chocolate chip cookie recipe into a Valentine’s Day special holiday treat for your gluten free friends and family with Valentine’s Day themed chocolate chips.

Since my little boy’s celiac diagnosis, I’ve been attempting all kinds of various recipes and flours to make presentable chocolate chip cookies that are gluten free. I’ve made some that taste amazing, however they crumble and fall apart like you can’t imagine. My efforts have looked so disastrous in the past the photos are comedic. Luckily, just in time for Valentine’s Day, here is a recipe you can feel good about baking and sharing with guests. These cookies are actually presentable and taste good too! Thanks to my good friend Jo-Lynne, who creates a weekly gluten free meal plan, for tipping me off to the almond butter trick!

Only 5 ingredients too – the key one being ALMOND BUTTER. And for a touch of Valentine’s Day fun, add these red & black semi-sweet chocolate chips from Nestle available at Walmart. Aren’t they pretty?

Valentine’s Day Style Gluten Free Chocolate Chip Cookie Recipe

Makes 3 dozen cookies.

Preheat Oven to 350 degrees. Line cookie sheets with parchment paper.

Ingredients:

1 Cup Almond Butter

3/4 Cup Sugar

1 Egg

1/4 tsp Salt

1/2 tsp Baking Soda

1 Bag of Semi Sweet Valentine’s Day themed Chocolate Chips from Nestle

Directions: Mix all your ingredients with the exception of the chocolate chips into a large bowl. Next slowly fold in your entire bag of chocolate chips. Line a cookie sheet with parchment paper. Spoon SMALL teaspoon sized cookies onto your cookie sheet.  

Bake for 10 mins at 350 degrees. Let cool for a few minutes before removing from the pan to minimize crumbling.

Tip: Definitely remember to keep the cookies small as they spread out a lot . In gluten free baking, the bigger the cookie, the bigger the crumble!

You’ll notice that it doesn’t look like a lot of dough compared to a traditional chocolate chip cookie recipe made with flour. But remember, you’ll be making very small cookies since they spread out so much with baking. The ALMOND BUTTER makes the cookies have a rich distinct taste.

How do they taste? Delicious and just like a chocolate chip cookie with a touch of almond flavoring. I do prefer traditional chocolate chip cookies made with flour, but as the  mom of a little boy with celiac disease, we’re needing to discover new treats and desserts that are gluten free. These really are the very BEST gluten free chocolate chip cookies and I love how easy they are to make with so few ingredients required.
