Cucumber Tomato Mozzarella Salad Recipe

We love fresh veggies and cool refreshing salads for dinner in the summertime. One of my faves that I can whip up in a few minutes is this delicious Cucumber Tomato Mozzarella Salad Recipe. Check out my simple recipe below for the scoop on this refreshing salad.

Cucumber Tomato Mozzarella Salad Recipe

For a spin on the classic Caprese Salad, I add Cucumbers to the mix. Yum! I especially love how they taste with my Rice Vinegar and Balsamic Glaze.

  Ingredients:

What you’ll need :

Cucumbers, Tomatoes, Fresh Mozzarella Cheese, Rice Vinegar and Balsamic glaze.

Directions: 

Slice up your veggies and mozzarella cheese. Top with Rice Vinegar and Balsalmic Glaze. Chill in the fridge before serving – even if only for 20 minutes – as it gives the veggies time to marinate in all the fixings!

  Today while making this recipe, I used Maruken Rice Vinegar, found on sale now at Walmart. I’m a fan of rice vinegars as I find they are delicious and a great add on to any salad dressing to help stretch the dressing flavor so you can reduce calories by adding a little less dressing thanks to the rice vinegar.

Maruken Rice Vinegar is sugar free and sodium free too.
My entire family loves our cucumber and tomato Mozzarella salad. The kids love the cheese and I love that they are sneaking in some veggies too!
