Easy Back to School Weeknight Meal Plan

I love to keep things ULTRA simple when it comes to weeknight meals and our weekly meal plan. Admittedly, I’m a convenience chef and I love the microwave and easy options that are healthy, kid friendly and quick to prepare.

Organizing a meal plan for my family helps me prepare my grocery shopping in advance and insures I’m still able to give my kids a REAL dinner during the school week even when we have sports 3 nights per week during the dinner hour. I recommend picking up convenience foods and staples at Walmart that preserve well in the fridge too so you can allow flexibility in the meal plan you create and maybe swap out a dinner at the last minute if your plans change.

With Swim team practice, Field Hockey, and homework for my 2nd grader and time for play outdoors for my Kindergartener, we are NON STOP during the week.

Tips for creating an easy meal plan for weeknights:

1. Think about LEFTOVERS and incorporate those into your meal plan on your RUSHED evenings.

2. Frozen veggies and Ham Steak are ultra easy, healthy and involve zero prep. Plus they preserve well in the fridge so great to keep in your fridge/freezer for an evening when you don’t know what to make!

3. Eggs and Cheese are staples we can’t live without! I always keep these stocked in my fridge too. High in protein and they make a quick easy to cook warm meal – egg sandwiches, scrambled eggs, fried eggs, or omlettes

My Easy Back to School Weeknight Meal Plan for the Week of September 15th:

Sunday September 15th: TACO NIGHT

Monday September 16th: Pork Sliders, Cole Slaw and Fresh Fruit

Tuesday September 17th: LEFTOVERS – Taco’s or Pork Sliders

Wednesday September 18th: Ham Steak and Steamed Mixed Vegatable from Bird’s Eye

Thursday: Sloppy Joe Sliders topped with Pineapple

Friday: Homemade Gluten Free Pizza

Saturday: Family Night Out at a Restaurant or Scrambled Eggs topped with cheese

Pineapple Sloppy Joe Recipe:

One of my favorite recipes is for our Pineapple Sloppy Joe’s. Here’s the scoop:

Ingredients:

1 lb Ground Beef

1 Can of Manwich Sloppy Joe Sauce

Pineapple Tidbits

Slider Rolls or Gluten Free bread if required.

Instructions: Brown ground beef. Add 1 can of Manwich Sloppy Joe sauce and warm over the meat. Dish onto Slider Rolls and top meat with pineapple tidbits.
