For the dressing:
  • 2 Tbsp apple cider vinegar
  • 1½ tsp. Dijon mustard
  • ¼ cup olive oil
  • 1 Tbsp honey
  • Salt and pepper, to taste
Directions:
  1. Start off by making your quinoa add ½ cup of water to a small saucepan and add quinoa. Bring to a boil, cover and reduce heat and simmer for about 10-12 minutes. Remove from heat, keeping quinoa covered, and allow it to sit for about 5 minutes then fluff quinoa with a fork.
  2. In a separate large bowl, mix together the kale, pomegranate seeds, dried cranberries and
pistachios. Once quinoa is done, toss on top!
  3. For the dressing: whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt and pepper in a small bowl.
  4. I suggest putting the dressing on right before eating, so, either serve right away or can make it ahead and wait to pour it on.
  5. Toss together and enjoy!

** Side note: This salad would taste amazing with honey goat cheese on top! :) **

If your ready to ease back into eating healthy, post holidays, this has done the trick for me! little sweet, salty, and full of flavor! { also has that green and red tones!
