I swear summer goes by so fast!!! It is already that time to use up all the summer vegetables, have a few more gatherings .. and share some of the highlights of the summer – like our Summer vegetable bowtie pasta dish recipe. YUM!
The long days, sunlight at 9 p.m. , pool time, family trips.. as we close another seasonal chapter, I always like to have one of my favorite summer pasta dishes! Zucchini, summer squash, cherry tomatoes, olive oil, garlic, chicken sausage ( optional ) and fresh pram to finish it off. Such a lovely combo and totally captures summer in a good dinner outside…. But I know when this dish comes out.. that fall is on the horizon.Let’s savor these last few summer days and perhaps bring this dish to your labor day party!
Summer vegetable bowtie pasta dish recipe
Here’s what you need:
1 box bow tie pasta 1 large summer zucchini – sliced 1 large summer squash – sliced 1 1/2 cup cherry tomatoes
2-3 chicken sausage S+P garlic red pepper flakes olive oil
1. Bring a large pot of water to a boil and cook pasta according to package directions. Drain well and set aside.
2. Heat oil in a large sauté pan over medium-high heat. Add fresh garlic, zucchini, and squash and sauté until tender. Remove from heat and stir in tomatoes until they become soft. Set aside, and add chicken sausage to pan and cook until lightly browned.
3. In a large bowl, combine cooked veggies, chicken sausage with pasta, season to liking!!! Finish with fresh shaved Parmesan cheese. Can be served hot or cold!
