Winter Kale Salad and Sweet Honey Dijon Dressing Recipe

I think I’ve have been eating this salad almost everyday since we celebrated Christmas. But not complaining because this Winter Kale Salad is nothing short of amazing and just the ticket to getting my eating habits back to normal.Post Christmas, I was feeling super lethargic { cookies, cakes, extra adult beverages } that I knew I had to jump right back into getting some greens into my diet. Simple and delicious way to ease back was adding this into my routine, and the dressing. This is the first time I’ve tried pomegranate seeds in a salad.. not sure why I hadn’t before are perfect with the crunchy pistachios and the sweet honey mustard vinaigrette { oh my yum! } is just the amount of sweetness and brings all the flavors together.

Winter Kale Salad and Sweet Honey Dijon Dressing Recipe

Here’s what you need:

  • ½ cup uncooked quinoa, rinsed
  • 6 cups chopped kale
  • 1 cup pomegranate seeds  { found mine at trader joes already pitted! }
  • ½ cup dried cranberries
  • ½ cup pistachios

For the dressing:
  • 2 Tbsp apple cider vinegar
  • 1½ tsp. Dijon mustard
  • ¼ cup olive oil
  • 1 Tbsp honey
  • Salt and pepper, to taste
Directions:
  1. ​Start off by making your quinoa add ½ cup of water to a small saucepan and add quinoa. Bring to a boil, cover and reduce heat and simmer for about 10-12 ​minutes. Remove from heat, keeping quinoa covered, and allow it to sit for about 5 minutes then fluff quinoa with a fork.​
  2. In a separate large bowl, ​mix together the kale, pomegranate seeds, dried cranberries and
    ​pistachios. Once quinoa is done, toss on top!​
  3. For the dressing: ​ whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt and pepper in a small bowl.
  4. I suggest putting the dressing on right before eating, so, either serve right away or can make it ahead and wait to pour it on.
  5. Toss together and enjoy!

    ** Side note: This salad would taste amazing with honey goat cheese on top! 🙂 **
