Cinco De Mayo Dinner Inspiration: Mexican Pie Recipe

Feeling inspired to serve up some Mexican fanfare in honor of Cinco de Mayo? Try out our favorite Mexican Pie dish that only takes 10 minutes to prepare and includes just 4 ingredients.  Can you say easy??? Perfect for a busy Mom like me.

Leftovers taste fabulous with this meal too as we find casserole style meals age so well.

Below is our recipe and step by step instructions. Serving ideas include dishing with corn, salad, and tortilla chips. Yum! This is a meal my entire family devours. The ingredients are really simple too and can all be found at your local Walmart. The 4 ingredients required are: Ground Beef, Salsa, Cheddar Cheese, and one package of crescent rolls or biscuits.

Mexican Pie Recipe:

Ingredients:

1 lb ground beef

1 package Crescent Rolls or Biscuits

1 – 15 oz jar of Salsa (Medium – so the kids will still eat it!)

2 cups cheddar cheese (8 oz package)

Preparation: Line a pie dish with crescent rolls to form your crust. Brown your ground beef then add salsa and 1 1/2 cups of cheddar cheese. Place the meat mixture on top of your pie crust. Top with remaining cheese. Cover with foil and bake for about 20 minutes at 375 degree. You can serve immediately or let it sit for 15 minutes to solidfy longer which will make it easier to “slice” and serve.

We served it with corn last night and the kids loved it which is a giant win in our house!
