Easy Dinner Recipe: Gluten Free Egg and Ham Casserole

This gluten free egg casserole recipe is delicious and a great source of protein for the entire family.

Quick prep, healthy, and and easy enough for the kids to help make! The best part is you can use household ingredients to create a yummy meal high in protein that works for breakfast and doubles as a high protein dinner meal that the kids will devour. With Kyle’s celiac disease, I’m always very conscious about nutrients and ingredients. This Egg and Ham casserole passes the taste test with the kids, is gluten free, and Mom and Dad love it too.

And prep time is lightning fast too – 5-10 minutes tops!

I need another 10 gluten free recipes just like this that are just as quick and easy to make and will be devoured by my ravenous children!

These are the ingredients I used  and you can buy all of them at Walmart as they are the basics – bread, milk, eggs, cheese, green pepper or whatever healthy fixings you’d like to include!

Ingredients:

4 slices of Udi’s Gluten Free White bread cubed. 

1/4 lb. of ham slices diced

8 eggs, beaten to blend

3/4 cup shredded cheddar cheese

Directions: 

Lightly grease a 9 x 13 inch baking dish. Arrange gluten free bread cubes in the bottom of prepared pan.

Then add diced ham, green peppers or any other favorites veggies or meats you’d like to include.

Pour whisked eggs over all. Top with cheese. 

 

Cover with foil and bake immediately OR refrigerate overnight to bake in the morning for breakfast. 

Preheat oven to 350 degrees. Bake casserole until eggs are set. Approximately 35 minutes. Cool 5 minutes. Serve hot. Top with Salt & Pepper to taste.
