Gluten Free Blueberry Crisp Recipe

It’s Blueberry season! I hope you will love our Gluten Free Blueberry Crisp recipe as much as we do. It is delicious. Super sweet and the blueberries are so yummy when prepared in this style. We love fresh fruit but also love baking our fruits into tasty desserts.

As I continue on my experiments of baking “gluten free” for my little boy who has Celiac disease and the rest of our family, I’m finding that “crisps” translate beautifully into a dessert the entire family can enjoy when I supplement the filling with a gluten free flour in lieu of a traditional all purpose flour. Crisps use minimal topping anyhow as the emphasis is on the fruit.

Since it’s summer, Blueberries are in season and we are devouring pints of them each week. You can pick up fresh affordable blueberries from your local Walmart to make your crisp as the rest of this recipe calls for my standard “pantry” baking ingredients like oats, gluten free flour, corn starch and so on.

Need tips on picking out the best blueberries?

Walmart passed these tips on to me – super helpful as I know those perfectly ripe berries taste incredible but if they are over ripe and gooey at purchase, they are already almost on their way out!

Select firm, plump berries with an indigo blue color and a silvery white frost. Avoid any with a green or red tint, which indicates underripe berries. If packaged in a carton, check to make sure there are no juice stains at the bottom of the carton or moldy or crushed berries buried inside.

Check out our Blueberry Crisp Recipe below. I adapted recipes I found online that used flour to make a crisp topping, into a gluten free versions for our family. This recipe places the emphasis on the fresh fruit flavor versus all kinds of other ingredients, so  my crisp is all about the blueberries and the better the blueberries, the more delicious your Blueberry crisp will taste.

Gluten Free Blueberry Crisp Recipe

It’s super easy to make this Blueberry Crisp, but you’ll need a few mixing bowls since you’ll both make your “filling” which is the blueberry mixture and create your crumbly topping mixture too. Both of my kids were able to tackle different jobs with directions from Mom since this was a 2 step process. They were thrilled to help out and beyond joyous with their “lovely” results as they devoured the Blueberry Crisp. It really is delicious!

Ingredients required:

Filling Mixture:

5-6 cups (3 pints) blueberries

1/2 cup sugar

1 tablespoon cornstarch

1 teaspoon lemon juice (You could use a fresh lemon, but I just use the little plastic Squeezey Lemon that I keep in my Fridge on  hand all the time so I have it ready for recipes as needed) 

1/4 teaspoon salt

Crumble Mixture:

3/4 cup Gluten Free Flour – My secret ingredient is to use Mama’s All Purpose Almond Blend Flour

1/2 cup Oats (We use the Quaker Instant Oats)

1/2 teaspoon baking powder

1/2 teaspoon salt

4-5 tablespoons of unsalted butter. Soften Butter before creaming it with sugar.

1/3 cup sugar

 Directions: Preheat oven to 375. Make your filling by mixing all your “blueberry filling” ingredients together. Next, make your crumble mixture. Step 1 is to Soften Butter and then cream it with sugar for the “topping” crumble mixture. Add in the rest of the “crumble” ingredients. Use your hands or a fork to try to make it a bit “chunky” or into little balls so you can sprinkle it on top of your blueberry filling mixture. Top your crumble mixture on top of your blueberry filling mixture that you’ve placed in a square baking dish. Cook for about 45 minutes or until your Blueberry Crisp is bubbling everywhere – not just on the corners!

To serve, let cool for 15-30 minutes. Top with ice cream or whipped cream if you desire. We personally think it tastes so sweet alone given all the fresh juicy fruit and sugar added into the filling so we eat it without any extras and love it!

This is what you’ll sprinkle on top of your blueberry “filling mixture”. Just gently sprinkle it on top and use as little or as much as you’d like. If you want a thicker crisp with more “crust” then make more of this crisp mixture. If you prefer more of a FRUIT flavor, definitely go a bit lighter. I had some leftover in our bowl with the above directions as I felt like I had really generously already poured on the topping – as you can see below.
