Pumpkin Protein Balls

From carving to decorating, eating and roasting the seeds there is just so much one can do with this fall favorite!

The Chocolate Pumpkin Protein Balls are the perfect little munch before taking the kids to the boss stop, pre workout eat or really .. when you just want some chocolate + pumpkin + peanut butter goodness!

Chocolate Pumpkin Protein Balls Recipe

Ingredients:

Here’s what you’ll need:

  • 1/2 cup natural peanut butter (or almond butter)
  • 1/2 cup pumpkin puree or canned pumpkin
  • 1/4 cup honey
  • 1/2 teaspoon pumpkin pie spice
  • 3/4 cup chocolate protein powder (I used Isagenix)
  • 1 cup old fashion oats
  • 1/4 cup semi-sweet chocolate chips
    { great add ins: sunflower seeds and cranberries! }
  •  Directions:
    In a large bowl, mix together peanut butter, pumpkin, honey, and pumpkin pie spice.
    Stir in protein powder, oats, and chocolate chips. Dough will be sticky*
    Refrigerate until easier to handle
    { I suggest letting them sit in fridge over night  if you CAN wait 😉 }.
    Roll dough into balls, then press between your hands to make a ball shape.Keep stored in a container in the fridge. Great little snack to make with your kiddos and learn about the benefit’s this FALL flavor brings to the table. Plus, who doesn’t love to get messy in the kitchen and eat the “dough”.upcloseppb
