Delish! You would never guess this is a gluten free mug cake! We created this Easy Gluten Free Peanut Butter Mug Cake recipe and my kids are devouring it. We’re excited to share this yummy gluten free dessert idea. I love being able to make something QUICK in the microwave that everyone can enjoy.
I promise you will not even suspect this incredible dessert is gluten free! It tastes so amazing!
My son has celiac disease so finding treats that everyone loves can often be a challenge but with our new found love of mug cakes, we’ve created an easy way to make a “CAKE” that everyone in the family approves and raves about!
Easy Gluten Free Peanut Butter Mug Cake
This recipe makes 2 very large mug cakes. We usually make 2 mug cakes and share them with our family of 4 and serve with ice cream. You can whip this together in about 5 minutes!
Ingredients:
- 1/4 cup gluten free flour (We use King Arthur Measure for Measure Flour )
- 1/2 teaspoon baking soda
- 2 TBS brown sugar
- 2 TBS white sugar
- 1 egg
- 3 TBS peanut butter
- 2 1/2 TBS oil
- 3 TBS milk (We usually use lactose free milk so any kind of milk works)
- 3-4 TBS semi-sweet chocolate chips (We like using mini chocolate chips but any kind works!)
Directions:
- Mix all of the below ingredients together in bowl.
- Split your mixture into 2 large mugs.
- Microwave until fully cooked and fluffy. Approximately 1 minute 40 seconds.

Here’s a few tips to hopefully make your gluten free mug cake turn out just right!
Bake Time
When you bake in the microwave, we think the secret to getting a fluffy rise for this Easy Gluten Free Peanut Butter Mug Cake is to definitely bake it all at once continuously. For our microwave, we found that 1 minute 40 seconds seems to be our sweet spot to allow this mug cake to rise perfectly fluffy.
When we once started at 1 minute and then added in 10-15 second increments, the mug cake didn’t rise as well or get as fluffy. (It did still taste delicious)
Use a Great Gluten Free Flour
Over the years we’ve tried so many different gluten free all purpose baking flours. However, as gluten free availability and products have improved over the last decade, our new favorite gluten free flour is the King Arthur Measure for Measure Gluten Free Flour.
Honestly, it is the only flour we keep in our household! Only my son is gluten free, but generally my entire family just cooks and bakes gluten free for a large portion of our diet – it’s certainly easier for us all to eat the same dinners and recipes!
You can buy King Arthur Gluten Free Flour in 1lb or 3lb bags online which is usually the easiest way for me to get my hands on gluten free flour.
We used to use “almond” flour and supplement one for one in recipes in the past, but we’ve now found a better gluten free flour. If we have our choice, we now prefer the King Arthur All Purpose Gluten Free Flour as long as it is available. Plus, if I’m serving to my children’s friends I don’t need to worry about nut allergies that might happen with an almond flour base!
Mug Cake Serving Ideas
You could eat your gluten free peanut butter mug cake straight out of the mug, but we recommend scooping it all out on a plate and serving with yummy vanilla ice cream
This works great and makes it easy to split the large portion sizes too.
