It’s that time of year where a lot of hiking happens. Once it’s nice out…I am full force outside! Whenever we got hiking, I always make sure to bring snacks. Apples, almonds, water, trail mix etc. I was in the mood for something different. And thought I would make something that goes along the hiking kinda theme. Oatmeal trail mix cookies! Gluten Free Oatmeal Trail Mix Cookie Recipe
Perfect portion of oatmeal packed with cranberries and pistachios. Little bit of sweet + salty.
Perfect treat on your long afternoon day of hiking. Sit back on a rock and enjoy these with your friends …
Here’s what you need:
- 1/4 cup butter, room temperature
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoon vanilla
- 1 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup creamy peanut butter
- 1 cup chocolate chips
- 3/4 cup cranberries
- 3/4 cup pistachios
- 3 cups rolled outs
- ** optional: crushed pretzels on top is a great addition!
- Preheat your oven to 350°F
- In a large bowl, cream together butter and sugars until smooth. Beat in the eggs one at a time until combined. Add vanilla, baking soda, and salt; mix well. Followed by peanut butter, mix until incorporated. Stir in oats, chocolate chips, pistachios + cranberries.
- Drop by rounded tablespoons a baking sheet about 2 inches apart { be sure to spray with some coconut oil } Bake for 10-12 minutes until golden brown around the edges.
- Cool … and devour 🙂
These come out out soft and chewy. Be sure to let them cool.
